Easy recipe to use your super ripe bananas!

  • 2-3 very ripe peeled bananas
  • 1/3 cup melted butter or coconut oil
  • 1 cup of granulated or raw sugar
  • 1 egg, slightly beaten
  • 1 tablespoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 1/2 cups all-purpose flour, sifted
  • 1 cup chocolate chips


Preheat oven to 350°F 

In a mixing bowl, mash bananas with a fork.  Stir in melted butter. Stir in the sugar, beaten egg, and vanilla.

In a separate bowl mix flour, baking soda and salt. Add to wet ingredients and mix well with a fork.  Stir in chocolate chips.

Pour the batter into greased loaf pan. Bake for about one hour.  Remove from oven and cool completely on a rack.
